The rise in popularity in cold brew coffee raises relevant questions concerning impacts these brewing techniques have on the beverage. Many people drink coffee specifically for the wakefulness they receive from caffeine, so understanding changes to the caffeine in nitro cold brew is a relatable desire.

Caffeine in Nitro Cold Brew Coffee

The process of cold brewing interacts with coffee beans differently than with a heated brew. Heat extracts a greater amount of caffeine than cold water can. All things being equal, a cold brew of a particular kind of coffee will have less caffeine than a heated brew of that same coffee. Alas, all things are so rarely equal. 

Many factors go into how much caffeine will be in a cup of coffee. Factors include the style of the coffee bean, how it is ground, brew time, and the ratio of coffee to water. So, yes, based on colder extraction temperatures, cold brew coffee can have lower levels of caffeine. Still, that is not to say cold brew coffee cannot have high levels of caffeine and even be higher than some standard cups of hot brew coffee.

Besides the texture and mouthfeel provided by the cascade of a hard pour of nitro cold brew coffee, the nitrogen plays a vital role in maintaining the quality of the coffee. By expelling the presence of oxygen, nitrogen makes it possible for cold brew coffee to maintain shelf life. 

When coffee is allowed to oxidize, it begins to degrade and becomes more bitter. This is similar to the way iron rusts when it is exposed to oxygen for too long. Without nitrogen playing its essential role, enjoying cold brew coffee would be limited to purchasing on tap or going through the lengthy process on your own time.
